Pão de Queijo!
Here it is, one of the most famous, popular and loved snack in Brazil.
The Pão de Queijo, or Cheese Bread, is famous from the state of Minas Gerais, that has a tradition on dairy products (cheese, milk and yogurt).
Cheese bread is a delicious baked treat that you can have as entrée or during tea time as a snack. After ready you may choose to fill it with cheese, cream cheese, butter, peanut butter, jelly or whatever your creative mind brings to the table.
Here is the recipe:
Ingredients:
2 cups of cassava flour (also know as “polvilho” or yuca flour, this is the yuca or cassava starch – where to find)
2 cups of shredded parmesan cheese
1 cup of warm milk
1 tablespoon of butter or margarine
2 eggs
1 teaspoon of salt
Directions:
Preheat the oven to 450º F.
Mix the flour with the shredded cheese until it’s uniform. Melt the butter/margarine on milk and pour it into the flour/cheese mix. Add the eggs and start mixing it with your hands. This dough will be ready when all of it gets off your hands. It’ll be uniform and heavy.
Spread oil on a rectangular baking sheet (you can use the same you have for cookies).
Spread a little bit of oil on the palm of your hands. With a tablespoon take small portions of the dough and make small balls. Place them on the baking sheet. Cook it for approximately 35 to 40 minutes or until they are golden brown outside. The final test to make sure the cheese bread is ready: push one of them down, if it returns to the original shape it’s ready. Wait at least 35 minutes to try this little trick.
Another hint: if you never had baked cheese bread before, go on the stores on the “where can I find” section. On the freezers area you’ll find a small bag of “Pão de Queijo” brand: Forno de Minas (this is how it looks) . Try it, and after that you are all set to start your own enterprise!
